Are you talking about hollowing out a bowl or a hollow form?

I use the square tip for removing the bulk material and the round tip for smoothing the inner surface.

Do you keep it centered or a little higher or lower of center?

If using EWT type tools, the cutters are flat and are designed to cut best with the cutter at center when the tool handle is parallel to the floor.

Because the Hunter type cutters are concave, they are more aggressive and are best used with the cutter at about a 45 degree angle and at or slightly below center. Rotating the cutter towards 90 degrees will give you a more aggressive cut but can also lead to trouble.

Most of all - stay safe - Dave

When hollowing, I have always held the cutter at or just slightly above center.  If you are too high, the cutter will not cut effectively.  If the cutter is too low, the inside curve of the form will draw the cutter in, resulting in what could be called a catch.
