The SDS lists the ingredients as

Distillates (petroleum), hydrotreated light, 30 - 60%
Stoddard solvent, 30-60%
2-Butanone oxime, 0.1 - 1%

Stoddard solvent is also known as mineral spirits.

No mention of metallic driers, but that doesn't necessarily mean that they aren't there.

Sounds like another instance of 'I wouldn't drink it, but when it cures, its perfectly safe.'

Polyurethanes are typically considered as Top-coats.
Salad bowl finishes are also considered top-coats but contain oils which penetrate.
These are two different manufacturers, each one has a slightly different composition.

They are both "basically" a blend of urethane, thinner and some type of oil, designed to penetrate, then harden.
They are not simply thinned polyurethanes with metal driers and on that subject, salad bowl finishes should not be thinned.

General Finishes  states ( proprietarily) :
urethane resin, resin, mineral spirits, metal driers.
I have used quite a bit of both and when it gets down to the bottom of the can it sure seems like regular poly to me. Maybe a finer 'cut' so it penetrates more ? When it dries thick, it also seems the same. Just curious as it is one of my favorites.
