applying an oil finish

This is strange to me, but someone might know the answer.  I have a segmented walnut bowl. Applied Walnut oil to inside and out..The inside has one coat and soaked in quite well. The outside has 3 coats of same oil and still has the look of not being completely soaked in. Has to be right? Thanks for any responses.

The outside has more exposed end-grain than the inside.

Yours does sound like an extreme case but with wood, nothing is certain.

Just curious...… Walnut oil is usually used on items that will be used for food such as a salad bowl.  Segmented items would not typically be used for food so  why not use lacquer, WOP, etc
