Spar Varnish?

Anyone have experience with spar varnish on wooden food bowls?  Polyurethane and urethane finishes don't claim to be waterproof and any food bowl will require hand washing with Dawn or similar mild dish soap after each use.

Spar varnish has a higher oil to resin ratio, which makes it a bit more flexible when cured, this means it's also a bit softer. i don't know how it would hold up to utensil usage.

I've been using Poly for my bowls and it holds up well with daily usage. My bowls have about 10-15 coats of full strength applied with a cloth.
