I have not found a piece of maple that I didn't like to turn.  Easy to turn, easy to sand. go for it what do you have to loose but a piece of wood, and the experience is free.

Birdseye is one of the harder maples, but it is still nice turning stock, use a sharp tool and slow sanding speeds and it will be gorgeous.  It sands and buffs to a high sheen without finish and finish makes it that much prettier.

All of the above is correct especially Chris' sanding tip. If you sand any hard wood @ high speed & get it hot it'll crack in an instant. Yes, I do speak from experience.

Hi:
The only problem with turning birdseye maple has more to do with the form of the turning than the wood.  The birdseye figure is primarily visible in the face grain of the wood so in order to display it to best advantage a form such as a plate, platter or lid with a shallow curve works better than a deep bowl shape where the only face grain areas are in the bottom of the bowl.

Good Luck!
Bob
